Choc Chip Muffins

Have you noticed how SO Many recipes online have a HUGE intro and lots of reading before the recipe? I respect your time (and mine 😂) and refuse to do that to you. Here’s a delicious easy muffin Recipe

2 eggs

1/2 cup coconut yoghurt

1/3 cup coconut milk

1 ripe banana

1 1/2 cups almond meal

1/2 cup tapioca

2/3 cup cacao powder

1/3 cup carob powder

1/2 cup coconut sugar

1 tsp baking soda

2 tsp cinnamon


100 organic chocolate, smashed into small pieces


To a blender add the eggs, banana, coconut yoghurt and milk. Blend until smooth.

In a large bowl add in all the dry ingredients.

Pour in the wet ingredients and mix well to combine.

It should reach a thick sticky consistency. Not too runny.

Spoon mixture into muffin trays and bake at 180 for 20 minutes. Check regularly to prevent it over cooking.

They’re ready when you put a skewer in and it comes out clean.
