Gut Healing Chia Custard with Yoghurt & Berries

YUM! This is a delicious option for breakfast or a snack.

Berry Chia Pudding

Chia Seeds

Contain protein, omega 3 fatty acids and calcium! The fibre in the chia seeds also lends itself to giving you a great morning poop! Along with its gel like consistency lining the gut to support healing.


Spices

Spices are one of the most underrated GUT and Immune supportive foods! They bring a big kick of flavour, and medicinally contain antiviral and antibacterial properties.


Eggs

I love the addition of the eggs as it boosts the protein content which balances blood sugar levels, keeping our energy even throughout the day. However if you're not an egg fan, you can omit them.


Organic Collagen Powder

Big Fan over here! Containing amino acids (protein), glycinate and glutamine Collagen acts to strengthen and heal the gut lining.


Ingredients:

1/3 cup chia seeds

1 cup milk; almond or coconut

1 cup water

2 cloves (or 1/4 tsp clove powder)

3 cardamom pods (or 1/4 tsp cardomon powder)

1 star anise

1 tsp cinnamon powder

2 Eggs

***Optional: 2 tbsp organic collagen powder


Method:

  1. In a large owl, combine the chia and water. Stir and put to the side.

  2. In a pot, add the milk and spices. Bring to a simmer (Not boil) then reduce heat.

  3. Crack in the eggs, and immediately whisk for 3 minutes. (If the milk is too hot it will scramble the eggs)

  4. If using the collagen powder, whisk it in here.

  5. Pour the milk into the chia mix and stir.

  6. Sit in the fridge for 1 hour or overnight to set.

  7. Serve with coconut yoghurt and berries!
