My FAMOUS B'NANA BREAD

Over the years this recipe has been upgraded, tweaked and developed to end up where it is today. I'm quite proud of it actually :)

This B'Nana Bread LOVES to be the perfect gift for new parents, as a snack shared with loved ones and in lunch boxes around the country. Enjoy!


Ingredients:

2 cups almond meal

1/2 cup tapioca flour

1/2 cup coconut flour

1 tsp baking powder

1/4 cup walnuts

1 tsp salt

1 tbsp cinnamon

1/4 tbsp nutmeg

1/4 cup coconut oil

1/4 cup raw organic honey

2 whole eggs

3 bananas


Method:

Prepare a loaf tin by lining it with baking paper. Cut the corners and fold the paper down and in to cover the tin neatly (a tip from my Nan!).

Then pre-heat the oven to 180 degrees celcius and your ready to get cooking!


In a bowl, add the almond meal, tapioca and coconut flour, baking powder, salt, walnuts, cinnamon and nutmeg. Give the dry mix a stir to evenly combine the ingredients.


Next, add the coconut oil and honey to a pot on the stove on low heat. When they have melted, take immediately off the stove and pour into the dry mix.


Crack the eggs into the dry mix and then mash two of the bananas into the mixture.


Continue to stir the mixture whilst slowly pouring in the melted coconut oil and honey.


Finally, pour the mixture into the prepared loaf tin.

Top with one banana sliced in half lengthways (as pictured)


Bake in the oven for 45minutes at 180 degrees celcius.


Enjoy with lashing of grass fed butter and a cup of tea.
