Pork & Cabbage Meal Prep

I love cooking once and feeding my Tribe for a week!

Recipe cooks 5 meals, but you could easily Double it!



Ingredients:

1 tbsp coconut oil

1 onion, finely chopped

1 carrot, chopped

1/4 bunch celery, chopped

600g pork mince

1/2 capsicum, finely chopped

1/4 cabbage, chopped

1/4 head broccoli, chopped


Dressing

1 tbsp sesemi oil

2 tbsp tamari

3cm fresh ginger, grated

2 garlic cloves, crushed

1 zucchini, chopped

1 cup parsley and/ or coriander leaves, chopped fine


Method:

I a small bowl, mix together the dressing and set aside.


On the stove heat a large pot or wok, with the coconut oil

Add the onion, carrot and celery, and cook for 3 minutes, stirring occasionally.

Add in the mince, stirring regularly until half of it is cooked. Add in the vegetables and continue to cook for 10 minutess or until the pork and veg is cooked through. At the end, pour over the dressing and stir through.


Can be portioned out and frozen.
