Muesli Bar Slice

A dense, grain free, no-bake slice packed with nuts, seeds, and natural sweetness. Makes 44 pieces.

Ingredients

• 200 grams almonds, raw

• 200 grams cashews, raw

• 100 grams coconut, dried shredded or flaked

• 100 grams pumpkin seeds

• 14 grams chia seeds

• 30 grams flax seeds

• 150 grams raisins

• 150 grams dark chocolate, 45-59% cacao, roughly chopped

• 1 tablespoons cinnamon

• 1 teaspoons Celtic sea salt

• 100 grams coconut oil

• 190 grams honey

• 80 grams tahini

• 70 grams peanut butter, natural unsalted

Method

Steps

  1. Grind nuts and coconut:Add almonds, cashews, and coconut to a food processor. Pulse until broken down into small rough pieces — you want texture, not flour. Do not over-process.

  2. Combine dry ingredients:Transfer the ground nut and coconut mixture to a large mixing bowl. Add pumpkin seeds, chia seeds, flax seeds, raisins, dark chocolate, cinnamon, and salt. Stir well to combine.

  3. Melt wet ingredients:In a small saucepan over low heat, combine coconut oil, honey, tahini, and peanut butter. Stir gently until fully melted and smooth. Do not boil.

  4. Combine and press:Pour the warm wet mixture over the dry ingredients and stir until everything is thoroughly coated. Transfer into a lined baking tray and press down firmly and evenly with the back of a spoon or your hands.

  5. Set in fridge:Place in the fridge to set completely before slicing into 44 pieces.

NOTES

Store in the fridge in an airtight container for up to 2 weeks, or freeze for up to 3 months. Press the mixture down very firmly before setting. This is what holds the bars together. If your mixture seems too dry, add a little extra melted coconut oil.
