High Protein Slow Cooker Chicken and Bone Broth Soup

Ingredients
1.5kg chicken thighs or breast
510g bone broth
218g onion, roughly chopped
210g carrots, roughly chopped
194g celery, roughly chopped
50g apple cider vinegar
18g coconut oil
4 cloves garlic, minced
1 tsp sea salt
1 tsp cracked black pepper
1 tsp dried thyme
1 tsp dried rosemary
1 tsp turmeric
Method
Add coconut oil to the base of your slow cooker.
Place chicken thighs or breast on top.
Add onion, carrots, celery and garlic around the chicken.
Pour bone broth and apple cider vinegar over everything.
Season with salt, pepper, thyme, rosemary and turmeric.
Cook on low for 7 to 8 hours or high for 4 to 5 hours.
Shred the chicken with two forks directly in the slow cooker.
Stir everything together and serve.
