High Protein Pork and Potato Rissoles

The easiest real food dinner that the whole family will love.

Five ingredients. One bowl. Dinner on the table in 20 minutes.

These pork and potato rissoles are the kind of meal that proves real food doesn't have to be complicated. High in protein, made from whole ingredients and genuinely delicious. They work as rissoles, burger patties or a lunchbox staple.

And the best bit? They're a brilliant way to use up leftover mash or roast potato so nothing goes to waste.

Ingredients

500g pork mince
1 cup leftover potato mash or roast potato, roughly mashed
2 tbsp onion powder
2 tbsp garlic powder
1 tsp sea salt
1 egg

Method

  1. Add all ingredients to a large mixing bowl.

  2. Mix well with your hands until everything is fully combined.

  3. Shape into 8 to 10 patties roughly 1cm thick.

  4. Heat a pan or barbecue over medium to high heat with a little coconut oil or butter.

  5. Cook for 3 to 4 minutes each side until golden and cooked through.

  6. Rest for 2 minutes before serving.

Serves: 4
Prep time: 5 minutes
Cook time: 10 minutes

Serve with:
A simple green salad and extra roast vegetables for a full real food dinner. Or pop them in a lettuce wrap with avocado and tomato for a burger night the whole family will get behind.
