Bacon & Greens Brunch

Not keen on eggs for breakfast? Or ran out (this was me :P)

Here's a delicious, brunch worthy meal that will leave you feeling satisfied, but wanting more :)

Ingredients:

2 rashers of good quality streaky bacon

3 kale leaves, finely chopped

1/2 cup of celery leaves, finely chopped

1/4 cup green peas

1 floret of broccoli, finely chopped

2x piece GF Toast ( I used this paleo bread recipe)

1/4 avocado

Lemon wedge

Macadamia feta ***Optional

Salt and pepper


Method:

  1. Heat a pan to medium, and add the bacon. Cook for 3 minutes on one side before flipping.

  2. Once the bacon has been flipped, add the kale, celery leaves, broccoli and peas to the pan. They'll cook in the bacon fat.

  3. Add the toast to the toaster, then stir the greens and bacon.

  4. Turn off the heat, spread the toast with avocado, macadamia feta, salt, pepper and drizzle with lemon. Top with the bacon and greens.
